So in the theme of fall and Halloween this week we made pumpkin cream cheese muffins. I was tempted to try the simple route and test out the cake mix + pumpkin puree muffins but I remembered making these two years ago and how good they were so we went this route. I think it was worth it! They are quite tasty!
The recipe is from Annies-Eats - quite possibly one of my favorite food blogs.
We mixed up cream cheese and powdered sugar, rolled it in a log and put it in the freezer to set. Then we mixed the pumpkin, sugar, eggs and oil and mixed up with dry ingredients in another bowl ready to mix with the wet.
Micah was my little baking helper and helped me top the muffins with a streusel topping after I had hidden the surprise cream cheese filling in the middle of the muffin batter. (Too bad I didn't realize how low we were on cinnamon because the topping really could have used more of it but I wasn't going to the store for just a tiny bit of cinnamon)
And then came the yumminess.
It made a delicious afternoon snack for these two and Abby enjoyed on as her after school snack as well.
