strawberry cupcakes

It was cold today - we had a high of 29 eek! That's a far cry from the warm 78 we were enjoying days ago. To stay warm inside (between doing loads of laundry!) I figured we could put to good use the white cake mix that has been staring at me in the pantry for a couple months now. I didn't want to do just plain white cake even though that generally is my favorite. Since the kids haven't been eating well due to their ear infections we've had some strawberries (that are normally a favorite around here) that hadn't been eaten yet. The couple times we've been to Sprinkles bakery (in Dallas, and Houston) one of my favorite cupcakes has been the strawberry cupcake so I figured we'd try to make some strawberry cupcakes at home. 

I took my box mix and made it into delicious strawberry cupcakes! My culinary experiment paid off because they turned out fabulously! 


To modify my white cake mix I adjusted the amount of water and oil to add to the mix. Here's what I ended up with:

1 box white cake mix
1/2 cup strawberries + a little more as I wanted a little more strawberry flavor to the cupcakes
1/2 cup water (box called for 1 c)
1/4 cup oil (box called for 1/3 c)
3 eggs (same as normal recipe)

Bake as directed

Then I frosted with a simple cream cheese frosting. Yum!
