Pumpkin Cream Cheese Muffins

I made these super delicious pumpkin cream cheese muffins yesterday evening. This week in preschool (week = Wed and Friday since Monday was a holiday) Abby's class is talking about apples and pumpkins so I wanted to make something pumpkin for them to fit into the theme and these just looked so yummy that I had to try them. I'm not even a big pumpkin fan and I knew I wanted to try them! Maybe a little overkill for a 4 year olds preschool class snack but I thought they would enjoy them. 


I had forgotten to look for pumpkin puree at the grocery on Monday so I sent Beau to the store. Apparently they were out of pumpkin puree - I've since found out there is a shortage of pumpkin puree - who knew? Well instead of scrapping my plan he scored some major hubby points. He brought home a pumpkin - and not a pie pumpkin either (because well they didn't have those either.) He went even further to roast it and puree it for me. I didn't have to do any of that. 




















came downstairs from putting the kids to bed to this huge amount of pumpkin puree - and that was only 1/3rd of the pumpkin! See he gets some major hubby points for that! 
























I made the batter - which uses 2 cups of that lovely homemade pumpkin puree. Then I put about a tablespoon in each muffin paper - enough to cover the bottom. On top of that I added a slice of cream cheese/powder sugar mixture that I had made and froze earlier. 
Then add batter on top of the cream cheese and top with some streusel topping. 
Mmm... Beau, the kids and I all gave these a big thumbs yup! (And I'm super picky so you know that they have to be good! 
To make thing even better not only did the hubby make the pumpkin puree for me - he also cleaned the kitchen for me when I was done with the baking. Again major hubby points!

go beau that is awesome...i bet the homemade puree was even better than the can...impressed he knew how to roast a pumpkin, i don't even know how to do that. oh and we made the tissue paper trees today, so adorable, thanks for sharing, and i made the FALL pics from that site...where they paint the letters that spell fall, and paint leaves and glue on...they had a lot of fun, and it was something i could do with them since it was a sitting activity.
